There are a few different types of tomestones in FFXIV, including the valuable tomestones of Phantasmagoria and Goetia available once you reach the highest level. However, many players forget all about Poetics once they reach the level cap and start focusing on endgame tasks. After all, roulettes were designed to incentivize high level players to continue running old content so newer players always have people to fill their parties.
Poetics are rewards for running content that used to be endgame level-capped duties, so the two just naturally go hand in hand. You can collect these tomestones at the same time as levelling a lower job.
There are only a few roulettes that give Poetics as a daily reward, listed below. The amount in brackets is the minimum reward you can get from the duty it places you in.
Some dungeons or raids may give more; Up to 50 for an old level capped dungeon. Khloe Aliapoh in Idyllshire will give you a journal each week full of duties to complete. Often one of the easiest rewards available is tomestones of Poetics. Frontlines matches will give you 50, while The Feast matches give only 20, but the matches are usually short. Make sure to augment the gear with the appropriate upgrade items twine, solvent, etc.
This augmented equpment will usually last you until the fourth dungeon of the next expansion, at which time you should upgrade with dungeon drops or HQ crafted gear for best results in combat. Augment these items by buying Illuminati Deepest Gobdip, Tautest Gobtwine, or Darkest Gobcoat for weapons, armor, or accessories, respectively. Be careful to select the correct upgrade material to avoid wasing your tomestones of poetics.
Once you have the items take them outside the building to Seika at Idyllshire 6. For the level 60 and 70 locations, there are several other sets of equipment that you might be interested in just for aesthetics.
Remember to upgrade them if you want them to be dyed. Some of the relic weapons require materials that are bought with tomestones of Poetics. Grade 3 Thanalan Topsoil is especially useful for maximizing plant crossbreeding, and is a good use of tomestones of Poetics.
You can also buy Grade 3 Shroud Topsoil, which increases the yield on your crops. Keep in mind there are a select few plants whose yield is unaffected by this type of soil. This high grade topsoil is obtained in the same manner as above, but with the Unidentifiable Shell instead.

And then, it also quickly became my primary source of plant-sustaining fulfillment, as soon as I realized that growing plants was a thing I could do—and that I could grow expensive plants for housing items.
Most of the housing suppliers in the different housing areas will happily sell you potting soil. However, as it says right in the description, it has no special effects on the crops you grow whatsoever. Which would imply that there is dirt that does have special effects, right?
Each of the three main regions, the Shroud, La Noscea, and Thanalan, have their own kinds of special dirt. These also come in three grades of effectiveness.
Shroud topsoil increases the number of things you harvest from each crop. La Noscea topsoil improves the quality of your crops. Thanalan topsoil increases the chances that your crops will crossbreed. I usually only go for the grade 3 variants, because they have the strongest effects. You can only get one bag of soil at a time, so it can take a while to gather. Luckily, there are other ways to get them! You can also use your tomestones of poetics from dungeons to buy unidentifiable ore in Idyllshire, which you can trade for the topsoil in the same building.
Of course, you can always get it on the market board, but depending on your server, it will be very expensive. On Famfrit, it rarely goes for less than 10, gil a bag.

Our FC has a lot of crafters so we solved the problem by planting shards in the FC gardens and storing them in the chest. We kept going until we had a good supply and then made sure to tell everyone they were available.
It took a little time to set up but now it only takes a few minutes every to keep our supply of shards and seeds topped up. If your FC doesn't have a house or isn't the sort of FC that would do something like this then I'd suggest using the 2 pots in your apartment and 2 more in your FC room, if you have one.
If you use grade 3 Shroud you should get a fairly decent supply just from these but even potting soil will give you 50 per pot every day. Alternatively, try and find a friend who isn't using their garden. On a few occasions you can get easily u to 7 shards from 1 hit, so unless you need a few thousand shards at any time, just set yourself an half an hour a side to gather a few hundred. Use them, then repeat so it isn't too mind numbing.
